A Black Belt (KUROOBI) in Sushi: A World Class Achievement

Behind each roll and every slice are years of discipline, learning, and relentless pursuit of perfection. The Black Belt accreditation is not just a title, but a recognition of the passion to create truly authentic Japanese flavours and experience.

What is KUROOBI? – The KUROOBI system, administered by the World Sushi Skills Institute, is the only internationally recognized sushi knowledge and skills certification endorsed by the All Japan Sushi Association. Inspired by the ranking style of martial arts belts, this accreditation measures both technical skill and mastery of Japanese culinary tradition.

Chefs are tested on:

 
  • The art of preparing and handling fish with precision;
  • Traditional sashimi and nigiri techniques;
  • The craftsmanship of maki and sushi plating;
  • Strict hygiene and safety practices.

Only chefs who score above 80% in their rigorous examinations are awarded the Black Belt, symbolizing world-class expertise.

It is a guarantee that every time you dine with us, you are tasting sushi crafted with the highest standards of technique and care, recognized on the global stage in Japan.  There are only 77 chefs worldwide, having one in Brno is home to sushi of a caliber found in Tokyo, Osaka, or Kyoto.
