A Rare Pleasure, Crafted with Purpose: Uni sashimi was part of our sold out Valentine’s Day Omakase. The golden roe of the sea urchin, was one of the highlights of the evening. Its buttery sweetness and purity showcased to our guests why uni is one of Japan’s most prized delicacies. 

Why It’s Not Always on the Menu: We don’t serve uni often. The truth is, uni is not a guaranteed ingredient. It is available only when we can  secure the finest quality. It must be bright, firm, and perfectly fresh. When it appears, it’s because everything aligned: the season, the sourcing, and the chef’s standards. 

That’s why we announce it only for special occasions, when we can preorder and ensure the quality is worthy of being served.
